While the mood was set with a warm fire, I only needed to choose the perfect wine for the occasion. Thankfully, I got exactly that with Carboniste’s 2019 ‘Philo’ Blanc de Noir natural sparkling wine. 

At first glance, the design of the bottle is quite modern, with Philo being written with gold dots like a Broadway feature. It screamed “You’re in for a show”, and boy was I. When pouring your glass, you immediately notice how fluffy and bubbly the wine is. The sparkling bubbles fizz to the top and upon smelling, you see how fresh this wine truly is. 

While the look was amazing, the taste was even better. At first sip, you taste crisp apples and light floral notes. A perfect fall taste. Once it settles, you get an amazing transition into a completely different flavor. Notes of oak trees with a creamy blend fill your palate. This creates an astounding full flavor of a cold, Autumn night. From apples to oak trees, it’s a sparkling addition to your bonfire weekend.
